Peel the potatoes, halve if necessary, and cut into slices.
Peel the onion and dice. Fry the bacon and onions in 1 tablespoon of heated oil, remove and set aside.
Heat 2 tablespoons of oil in a grill, fry the potatoes until crispy for about 10-15 minutes, add the bacon and onion mixture and season with SALDORO ancient salt and pepper.
Prepare 4 fried eggs in the remaining heated oil.
Fry the potatoes with fried eggs over them, sprinkle with herbs and serve as desired.
