Hearty quince tart

Prep Time:

Ingredients

Dough:

  • 170 g flour
  • 1 tsp sugar
  • 1 tsp SALDORO glacial salt
  • 110 g cold butter
  • 4 cl water


For the filling:

  • 2 quinces
  • 1 liter of water + 1 tsp of SALDORO primal salt
  • 100 g soft goat cheese
  • 200 g cream
  • 2 eggs (L)
  • 2 tsp SALDORO glacial salt
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1/2 tsp black pepper


Decoration:

  • fresh thyme twigs
  • fresh ground pepper black

Instructions

  1. Knead ingredients for the dough, wrap in cling film and refrigerate for about 20 minutes Roll out and line the tart mould with it.
  2. Peel quinces and cut into thin slices and cook in boiling salted water for about 10 minutes. Then drain and arrange in the tart tin.
  3. Whisk cream, egg, salt and spices together and pour over the quinces
  4. Cut goat cheese into 7 evenly sized slices and place them on the quinces.
  5. Bake in preheated oven at 180°C convection oven for 25 minutes. Leave to set for about 5 minutes, then remove from the oven and garnish with thyme and freshly ground black pepper.
  6. A fresh salad goes very well with it.

Tip: If you don’t get quinces, you can also bake the tart with pears. The pears then do not have to be pre-cooked.
